The Drink

Ingredients

  • 6 fluid ounces of Sprite (7 Up does put a little different spin on it for those wild and crazy socials, also if you would prefer a Red Headed Sexy Matt switch up the lemon lime soda for your favourite Ginger Ale)
  • 1.5 fluid ounces of Lambs Black Sheep (Alternatively you could use your own preferred brand of spiced rum but to get the full effect it is strongly recommended that you use the Lambs brand.  This rum has hints of caramel and vanilla that add the essence of life to each sip) 
  • 2 1 ounce ice cubes


Directions

  1. Drop the ice cubes in the glass a rock glass, make sure they make that special clank when bouncing off the insides of the glass.
  2. Firmly but gracefully add the Spiced Rum.
  3. Let the Rum get to know the ice for 10-15 seconds, then proceed to add the Sprite.

The Sauce

Ingredients

  • 1 cup prepared yellow mustard
  • 1/2 cup sugar
  • 1/4 cup light brown sugar
  • 3/4 cup cider vinegar
  • 1/4 cup water
  • 2 tablespoons chilli powder
  • 1 teaspoon black pepper
  • 1 teaspoon white pepper
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon soy sauce
  • 2 tablespoons butter
  • 1 tablespoon liquid smoke


Directions

When you pork butt is about three hours from being finished you know then that it is time to make The Sauce.  Add all ingredients to a saucepan and bring just to a boil.  Turn down the heat to simmer and let the ingredients get to know each other.  Keep it at a simmer for the remainder of or Pork Butt cook.


The Butt Rub

I rub my pork butts with the following, this also goes great on ribs.


Ingredients


  • 1/2 cup brown sugar
  • 1/4 cup smoked paprika
  • 1 tablespoon black pepper
  • 1 tablespoon kosher salt
  • 1 tablespoon chilli powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder 
  • 1 teaspoon cayenne


Directions


Combine all ingredients together and transfer to an air tight container.  Recipe should be enough to rub two 8-10 lbs butts.
